This Pork Chops and Apples recipe is a really nice simple meal for two. You need very few ingredients: just an apple, some brown sugar, cinnamon and 2 juicy bone-in chops. The result is a seasonal fall dinner which you can serve with buttery mashed potatoes.   

To make this pork dish, start by sprinkling brown sugar and cinnamon over apple slices and baking in the oven. Cook the pork chops in a hot skillet until lightly browned all over. Heat oven and prepare a baking dish

Preheat the oven to 350 °F. Spray a 15x10-inch baking dish with cooking spray.

Bake apples

Place apple slices in a 1½-quart casserole dish. Sprinkle the apple slices with 2 tablespoons of brown sugar and ¼ teaspoon of cinnamon. Cover the dish with foil and bake in the oven for 15 minutes.

Spray a medium sized nonstick skillet with cooking spray and place over medium heat for 1-2 minutes. Cook the pork in the warmed skillet for around 6 minutes, turning once, until lightly browned all over.

Place pork in casserole dish

Place each chop onto the baked apples and cover the dish with foil.

Bake the dish in the oven for 10-12 minutes until the chops are golden brown and cooked through and the apples are tender.

Serve straight from the oven with buttery mashed potato or steamed greens on the side.
