These Quick Cilantro Fish Cakes are one of my Friday night meals. They are super simple to make. When you are making these fish cakes, it is very important that there is no excess moisture in the fish or the mixture will be too sloppy and difficult to shape. When pulsing the mixture in the food processor, pulse using small bursts. You don’t want to end up with a smooth paste. You want to mix until you have some paste and some fish chunks for some texture.
To make these delicious fish cakes, start by thawing, draining, and wiping the fish. Cut into smaller pieces and set aside. Pulse the fresh bread to make bread crumbs in a food processor. Remove and set aside and add the onion, garlic, ginger, and herbs. Pulse until minced. Then add the fish and pulse until the mixture is paste-like with some chunks. Place in a mixing bowl and add beaten egg and bread crumbs. Combine and season with salt and pepper. Shape into flat patties and fry in hot oil until golden brown on each side. Remove and drain excess oil on a paper kitchen towel. Serve with tomato sauce, mayonnaise, or tartar sauce on the side.
To make my version of Quick Cilantro Fish Cakes, you will need the following ingredients:
Thaw 1 pound of fish if frozen. Drain and wipe the fish with paper towels and cut into small chunks. Set aside.
Place 2 slices of bread in the food processor and pulse to make bread crumbs. Transfer to a bowl and set aside.
Add ½ a cup of onion, 1 tablespoon each of minced garlic and ginger and add chopped cilantro or parsley. Pulse until minced and add the fish and pulse until you have a mixture which consists of some paste and some fish chunks for some texture.
Add the breadcrumbs and half of the beaten egg. Use your hands to combine the ingredients until the mixture has a texture that can be shaped into a patty. If the mixture falls apart, add more beaten egg.
Season with salt and pepper. Take about ¼ cup of the mixture using damp hands, roll the mixture into a ball before flattening.
Heat two tablespoons of oil in a shallow frying pan or cast-iron skillet.
Gently place the fish cakes in the hot oil. Cook for 3 minutes on each side until golden brown.
Drain excess oil on paper towels.
Serve immediately with tartar sauce, mayo or tomato sauce to dip.
