If you’ve followed my recipes for a while now, you’d know I love sandwiches. Sometimes, I crave a healthy lunch and this Salad Cress Avocado and Chickpea Open Sandwich just cannot be beaten! This recipe is slightly different to my usual sandwiches as it’s open, so there is less bread but it is still very filling.
To make this sandwich, I start by toasting 2 slices of rustic brown bread under the grill and top each slice with freshly cut salad cress. I mash a large avocado with lemon zest and juice and divide it between the two slices of toast. I top each sandwich with chickpeas and the remaining cress and serve.
To make Salad Cress Avocado and Chickpea Open Sandwich, you will need the following ingredients:
Toast 2 large slices of rustic brown bread under the grill or in a toaster.
Mash 1 large avocado with the zest of half a lemon and 1 tablespoon of lemon juice. Season with black pepper to taste.
Snip ¾ of the salad cress from the punnet and arrange it on top of the bread slices.
Divide the avocado filling between the two slices of toast.
Top the sandwiches with chickpeas and garnish with the remaining cress. Enjoy!

Without meat is the way to go with this one, I'm not vegan but I tried with and without and the meat ruins the flavor so recommending ya'll to keep it off this crunchy masterpiece.
Perfect for lunch I brought some to work and it was very filling and tasty.
It actually is kinda zesty cause the lemon but I think that gives it a bit of a kick which is what's needed for this snack.
