Heat oven

Preheat the oven to 425 °F. Line a baking sheet with parchment paper.

Roast onions

Place sliced onion on the baking sheet. Drizzle with 1 tablespoon of olive oil and season with salt and pepper. Toss to ensure the onions are evenly coated and spread them out in an even layer. Place in the oven to roast for 5 minutes.

Prepare peppers

Place the bell pepper slices in a medium bowl and mix with 1 tablespoon of olive oil and season with salt and pepper. Remove the baking sheet from the oven and push the onions to one side. Place the sliced peppers in the center of the baking sheet.

Add sausages

Place the sausages in an empty spot on the baking sheet, next to the peppers.

Cook in the oven for about 25 minutes until the onions are tender and translucent and the sausage is cooked through. Shake once halfway through cooking.

To serve, slice the sausages into bite-size chunks and divide them evenly between the four hoagie rolls. Top each one with roasted peppers and onions.
