Spiced Roasted Apples & Blackberries is a quick and easy dessert that I love to make at this time of year. Near our home there is a huge collection of blackberry bushes that no-one seems to know or care about except us. Every year, we go blackberry picking with buckets. We come back with pink fingers and lips and surprisingly we usually come back with enough blackberries to make some nice desserts too!
This dish is so easy to make and only requires 5 ingredients. I start by baking the apples with the honey, cinnamon and orange. Towards the end of the cooking time I add the blackberries. The result is a perfectly spiced roasted apple with tart berries. Delicious.
To make Spiced Roasted Apples & Blackberries, you will need the following ingredients:
Preheat the oven to 350 °F.
Core each apple so you have a hole in the middle of each one. Cut slightly into the skin around the middle of each apple.
Place each cored apple in a shallow baking dish.
Mix the honey, cinnamon and orange zest in a small bowl. Place an equal amount into the hole in the middle of each apple.
Pour the orange juice into the baking dish with the apples.
Bake for about 40 minutes. Spoon the cooking juices over the apples occasionally while baking.
With around 10 minutes remaining, spoon the blackberries around and over the apples. Continue to bake for 10 more minutes.
Serve the apples topped with the blackberries. Sometimes I add whipped cream and/or ice cream if I am feeling decadent.
