I never thought I could look forward to eating raw cabbage, but this Spicy Cabbage Salad with Turkey and Peanuts changed that! When I was a child, the cabbage I ate in the kindergarten was always an overcooked mushy mess. It was only when I started experimenting in the kitchen that I realised what a delicious wonder vegetable it really is! And the best way to showcase it is when it is crisp and crunchy in a salad like this one.
Start by mixing the cabbage leaves with salt and rubbing them together for about 2 minutes – the salt will both season the leaves and make them more tender. This process also encourages the flavor to emerge. Make a dressing from anchovies, lemon zest and juice, rice vinegar, soy sauce, white miso, sugar and oil. Mix the salad ingredients with the dressing and that’s it! Simple and delicious!
