This awesome Spinach salad with bacon and eggs is packed with iron and protein and tastes amazing!
I know, I know, it’s a salad! But let me tell you when you add one of my favorite combinations – bacon and eggs – to crisp spinach leaves and a zingy dressing, it makes for a pretty punchy meal. And it really couldn’t be easier! I like to knock this together after a workout, or if I need something quick before I run out of the house.
To make Spinach Salad with Bacon and Eggs, you will need the following ingredients:
Heat a large pan over a medium heat. Add the slices of bacon and fry gently on each side until crisp. Remove them with tongs and put the slices on a piece of paper towel to soak up the excess fat. Once cool, chop/crumble the bacon into pieces.
Place the eggs in the bottom of a small saucepan and cover with cold water. Turn the heat on high and bring to the boil, boiling for one minute. Then take the pan off the heat and let it stand for 12 minutes. Drain and run under cold water. Once cool, peel the eggs and roughly chop.
Peel the garlic clove and roughly chop. Sprinkle the salt over the chopped garlic and using the side of your knife, mash them together into a paste. Put the paste in a bowl, add the vinegar and mustard and then whisk together with the olive oil. Add pepper (and more salt if needed) to taste.
Place the spinach leaves, chopped eggs and bacon together in a large salad bowl. Pour over the dressing and toss gently to combine.
