For sure, homemade pizza dough is a tasty weekend project, but sometimes I want the same delicious flavor without all that fuss. And that’s where the store-bought pizza dough comes in. For this recipe, I use whole wheat pizza dough but feel free to choose your favorite.
It’s cherry season, and I have a great recipe to share with you! Since cherries and feta go remarkably well together, it makes sense to combine them not only into a salad. So swap the tomato sauce and give your pizza a makeover by topping with fresh cherries and two types of cheese. Garnish with a drizzle of tangy balsamic glaze to provide the perfect balance to the sweet summer fruit and enjoy!
To make the Summer Pizza with Cherries and Feta, you will need the following ingredients:
Preheat the oven to 475 °F.
Lightly flour the work surface and roll out the dough to desired size and thickness. Transfer to a baking sheet sprinkled with 1 tablespoon cornmeal.
Lightly brush the dough with 1 teaspoon olive oil. Sprinkle 1 ½ cups grated mozzarella over the dough, leaving a ½-inch border around the edge.
Spread 1 cup pitted and halved cherries evenly over mozzarella and then top with ½ a cup crumbled feta. Season with a pinch each of salt, freshly ground black pepper, and red pepper flakes.
Bake for 10 to 15 minutes or until the crust is golden and the cheese is melty and gooey.
Once baked, remove from the oven and sprinkle with the remaining ½ a cup feta cheese and microgreens. Finally, drizzle with balsamic glaze.
Serve immediately and enjoy!
