I made these veggie Sweet Potato, Avocado and Black Bean Tacos for a meat loving friend recently and you won’t believe what they said: “I don’t even miss the beef”! That’s how good these tacos are – even meat lovers love them. You can easily make these vegan by omitting the cheese or substituting it with some vegan feta.
To make these, I start by roasting the sweet potato with some oil and chili. Towards the end of the sweet potato cooking time, I heat the salsa verde and black beans. I serve everything in the middle of the table and allow my guests to assemble their own tacos. This takes the pressure of the chef and allows everyone to be involved in the process!

Preheat the oven to 450 °F. Arrange the sweet potatoes on the rimmed baking sheet in a single layer. Season with olive oil, chili powder and 1⁄2 teaspoon salt.
Roast the sweet potatoes in a baking tray for around 30 mins until tender.
In a saucepan, cook the salsa verde and black beans over medium heat until they are warm.
I like to place the sweet potatoes and beans on the table with the avocado, corn tortillas, cilantro and cheese (if using). That way everyone can assemble their own taco!
