1 small head Cauliflower cut into florets
7 tbsp extra-virgin Olive oil divided
1 tsp Kosher Salt
1/2 tsp Black pepper freshly ground
2 tbsp Sherry vinegar or 1 tbsp red wine vinegar
7 cups torn Lettuce
1 cup torn Arugula
2/3 cup Pomegranate seeds

This Sweet Potato and Cauliflower Salad recipe is a delicious festive salad which everyone will love! It combines warm, roasted vegetables with lettuces, pomegranate seeds and a sherry vinaigrette. 

To make the salad, start by roasting sweet potatoes and cauliflower in the oven and leave to cool. Make a dressing by whisking olive oil, sherry vinegar, salt and pepper together in a bowl. Add a selection of lettuce, arugula, pomegranate seeds and the roasted vegetables to the bowl with the dressing and toss to coat. Serve immediately and enjoy!

Steps to make Christmas Sweet Potato & Cauliflower Salad

Preheat oven

Heat the oven to 425 °F.

Prepare vegetables

On a rimmed baking sheet, toss together 1½ pounds of sweet potatoes, 1 small head of cauliflower and 3 tablespoons of olive oil. Season with salt and pepper.

Roast veggies

Roast the vegetables for 25 - 30 minutes, tossing once halfway through.

Make dressing

Whisk the remaining 4 tablespoons of olive oil with 3 tablespoons of sherry vinegar in a bowl with salt and pepper.

Add roasted veggies, lettuce and pomegranate seeds

Add lettuce leaves, arugula, â…” cup of pomegranate seeds and the roasted vegetables. Toss well to coat with dressing.
