Want a delicious dinner to be on your table in 15 minutes? This warming Thai-Inspired Chicken and Rice Noodle Soup is the simplest weeknight dinner. Cozy, with fragrant spices and a little heat, this chicken soup is made with flavorful Thai curry paste, chicken broth, coconut milk, and lime juice. Toss in plenty of delicious rice noodles and sprinkle with fresh cilantro and scallions, it’s hard to beat a good soup.    

Start by sautéing the shallots and ginger. Add the curry paste and cook until fragrant, about 1 minute. Then add the chicken broth, coconut milk, fish sauce, sugar, lime juice, and ground turmeric. Bring to a simmer and cook, uncovered, for 5 minutes. While the soup is simmering, cook the rice noodles. To serve, divide the rice noodles between bowls and ladle the soup over. Top each bowl with scallions and cilantro, and serve with Sriracha and lime wedges for a little extra zing. Enjoy!

    In a medium pot over medium-low heat, heat 1 tablespoon vegetable oil. Add ½ cup thinly sliced shallots and 1 tablespoon minced fresh ginger and cook, stirring frequently, until softened, 3-5 minutes.

    Add 2 tablespoons Thai green curry paste and cook, stirring constantly, for 1 minute.

    Add 4 cups low-sodium chicken broth, 1 can coconut milk, 2 tablespoons fish sauce, 4 packed teaspoons dark brown sugar, 2 tablespoons fresh lime juice, and ½ teaspoon turmeric and bring to a gentle simmer. Simmer, uncovered, for 5 minutes. Taste and adjust the seasoning if needed.
