Preheat the oven to 425 °F and lightly coat a 10 by 15-inch rimmed baking sheet with oil.

2

Transfer dough to baking sheet

3

Remove the dough from the refrigerator 1 hour before baking and place it in an oiled bowl. Cover and let it come to room temperature. Gently stretch the dough evenly to fill the prepared baking sheet. If the dough shrinks back, let it rest for 5 minutes, then try again.

Bake in the preheated oven for 7 to 8 minutes.

4

Make scrambled eggs: Beat eggs

2

Beat 8 large eggs and 2 tablespoons cool water together.

5

Cook eggs

5

In a large nonstick skillet over medium heat, melt 1 ½ tablespoons butter. Add egg mixture and cook slowly, folding and stirring the eggs every few seconds with a spatula. Be sure to slightly undercook the eggs. Season with kosher salt and fresh ground black pepper to taste.

6

Spoon eggs onto dough

2

Spoon the scrambled eggs onto the stretched pizza dough.

7

Add toppings

3

Top the eggs with 1 ¼ cups shredded provolone, 1 cup shredded Cheddar cheese, chopped bacon, cooked sausage, diced red pepper, and chopped scallions.

8

Bake

10

Bake for 10-12 minutes, turning on the broiler for the last 1-2 minutes. Watch closely and rotate the pan several times during broiling to prevent burning.

9

Serve

Slice and serve!
