1 Onion medium, diced
1 Red bell pepper seeded and diced
4 cloves Garlic finely chopped
2 tsp Ground paprika
1 tsp Cumin
¼ tsp Chili powder
1 can Tomatoes whole peeled, 28-ounce
6 Large eggs
Salt to taste
Black pepper to taste
1 bunch Cilantro small, fresh, chopped
1 bunch Parsley small, fresh, chopped
2 tbsp Vegetable oil

Cook peppers and onions

In a large frying pan, heat oil and add bell peppers and onions. Cook for 5 minutes until onions are soft and translucent.

Add garlic and spices

Add garlic, paprika, cumin and chili powder and cook for another 1 minute.

Add tomatoes

Add can of tomatoes including all the juices and break apart bigger tomatoes using a cooking spoon.

Season

Season with salt and pepper to taste and bring pan to a simmer.

Add eggs

Use a spoon to make 6 small spaces for eggs. Crack open an egg into each small well.

Cover pan with lid and cook for about 5-8 minutes until eggs are cooked to your preference.

Serve

Season eggs with salt and pepper and garnish with cilantro and parsley before serving.
