4 Sweet potatoes small , about 7 oz each
6.4 oz can Canned tuna in spring water, drained
Red onion small, thinly sliced
Juice of 1 Lime
6 tbsp Greek yogurt
Red chili small, deseeded and chopped, optional
1 handful Cilantro leaves, optional

To start, you’ll need 4 small sweet potatoes. Microwave the pierced sweet potatoes until tender. Then slice them in half lengthwise and top with tuna, sliced onion, and chopped chili and squeeze the lime over the top. Dollop with Greek yogurt and sprinkle with cilantro leaves. Serve right away and enjoy!

Steps to make Tuna Sweet Potato Skins


Microwave sweet potatoes


Scrub 4 small sweet potatoes and pierce them all over with a fork. Place them on a microwave-safe plate and cook on high for 18 to 20 minutes or until tender.


Slice in half


Slice the cooked sweet potatoes in half lengthwise and place cut-side up on a serving platter.


Add toppings


Flake the drained tuna with a fork. Divide the tuna between the sweet potatoes. Top each sweet potato half with thinly sliced red onion and chopped red chili, if using, then squeeze the lime juice over the top.



To serve, dollop with Greek yogurt and top with cilantro leaves. Enjoy!
