I love this recipe for Ukrainian Dumplings aka Galushki which is one of my mother’s specialties. I am so happy to share this family favorite with you today. Galushki is like the Ukrainian version of gnocchi – a type of potato pasta dumpling. Yum!
Start by making the Ukrainian dumplings dough recipe by placing the flour in a large mixing bowl. Make a well in the center of the flour and pour in eggs, water and melted butter. Mix it together and roll into long pieces. Cut into small pieces to make the dumplings and cook in a large saucepan of boiling water. Make a topping from mushrooms, bacon pieces and butter. Finish the galushki in a skillet and top with the mushroom and bacon topping.
To make my Ukrainian Dumplings aka Galushki, you will need the following ingredients:
Place 5 cups of flour in a large mixing bowl. Create a well in the center of the flour. Whisk 4 eggs with 1 cup of lukewarm water and 150 grams of melted butter. Bring the dough together with a fork and finish mixing by hand.
Divide the dough into 8 equal pieces. Roll each piece into a log shape. Chop each log into smaller dumplings.
Bring a large saucepan of salted water to a boil. Add the dumplings to the saucepan and cook them until they float to the top of the water.
Place 1 pound of diced mushrooms in an oiled skillet and sauté them for about 5 minutes.
Add a diced onion and continue cooking until soft. Season to taste with salt and pepper.
Stir 1 cup of bacon pieces and 3 tablespoons of butter to the mushrooms in the skillet. Continue to cook for 5 more minutes.
Place the dumplings in a separate skillet and add the sautéed mixture. Cook until golden brown.
Serve the galushki immediately!
