Vegan Gluten-Free Almond Crackers are crispy, simple and quick to make! To make them, all you need is nine ingredients, a rolling pin, two baking sheets, and a little time. If you have ever made your own almond milk, you may have wondered what to do with the leftover almond pulp. The answer is to put it to good use. And now you can use it to make these delicious and healthy crackers.
I like to use my food processor to shorten the preparation time, but it’s totally optional. You can use a mixing bowl as well. The base of these crackers is the leftover almond meal and gluten-free flour blend. Please feel free to use any gluten-free blend of choice. One last idea: make more of these crackers than you think you need, because they don’t last long!
To make the Vegan Gluten-Free Almond Crackers, you will need the following ingredients:
Preheat the oven to 325 °F.
In a food processor or mixing bowl, process ¾ cup gluten-free flour blend, ⅔ cup almond meal, ¼ teaspoon baking powder, 2 tablespoons flaxseed meal,1 teaspoon fresh rosemary, ½ teaspoon sea salt, ⅛ teaspoon garlic powder until combined.
Add 3½ tablespoons oil and pulse until crumbly.
Add 1 tablespoon cold water at a time, pulsing between each addition, until the dough is moldable and not crumbly.
Divide the dough into two halves. Transfer to a surface lined with parchment paper and shape into a loose square. Lay another piece of parchment paper on top and roll the dough into a rectangle a little less than ⅛th inch thick.
Using a pizza cutter or a knife cut the dough into squares and transfer to a baking sheet. Place in the freezer for 10 minutes. Roll out and cut the remaining dough.
Using a spatula, carefully separate the crackers.
Bake for 16 and up to 22 minutes, you can remove the crackers as they brown to your liking.
Serve with a dip of choice, and enjoy! Store the leftover crackers in an airtight container for up to 1 week.
