Also known as carrot lox, this plant-based alternative to traditional salmon lox is made with shaved carrots pickled in a mixture of rice vinegar, water, lemon juice, smoked paprika, salt, capers, and fresh dill. The nori flakes in the recipe help add the flavor of the sea, while soy sauce brings the umami.
Start with the carrots. Use a vegetable peeler to shave the carrots into long ribbons. Next, prepare the pickling liquid and bring it to a boil. Once at a boil, add in the carrots and let simmer for a few minutes. To a wide-mouth jar, add the fresh dill, capers, and nori flakes. Finally, transfer the carrot ribbons along with the hot pickling liquid to the prepared jar and set aside to cool to room temperature. Let chill in the fridge overnight, so the carrots absorb every bit of flavor, then serve. Pairs perfectly with bagels (homemade if you wish) and vegan cream cheese.
