Learn how to make this Vegan Smoked Salmon recipe easy and impress your family and friends! Also known as carrot lox, this plant-based alternative to traditional salmon lox is made with shaved carrots pickled in a mixture of rice vinegar, water, lemon juice, smoked paprika, salt, capers, and fresh dill. The nori flakes in the recipe help add the flavor of the sea, while soy sauce brings the umami.

Start with the carrots. Use a vegetable peeler to shave the carrots into long ribbons. Next, prepare the pickling liquid and bring it to a boil. Once at a boil, add in the carrots and let simmer for a few minutes. To a wide-mouth jar, add the fresh dill, capers, and nori flakes. Finally, transfer the carrot ribbons along with the hot pickling liquid to the prepared jar and set aside to cool to room temperature. Let chill in the fridge overnight, so the carrots absorb every bit of flavor, then serve. Pairs perfectly with bagels (homemade if you wish) and vegan cream cheese.

Steps to make Vegan Smoked Salmon

Prepare carrots

Using a vegetable peeler, shave 2 carrots into long ribbons.

Prepare pickling liquid

In a small saucepan, add ¼ cup rice vinegar, ½ cup water, 2 teaspoons smoked paprika, 3 teaspoons soy sauce, 1 teaspoon lemon juice, and ¼ teaspoon salt and bring to a boil.

Add carrots

Add in the carrot ribbons and let simmer, covered, for 3 minutes.

Prepare pickling jar

To a wide-mouth jar, add 3 sprigs fresh dill, 2 teaspoons capers, and 1 teaspoon nori flakes.

Add carrots and pickling liquid

Add in the carrot ribbons along with the hot pickling liquid. Set aside to cool to room temperature, then screw the lid on and transfer the jar to the fridge overnight.

Serve with bagels and vegan cream cheese, and enjoy!
