Rotini pasta tossed in a luscious tomato vodka sauce, a perfect food. It is one of my favorite weekend dinners, and it tastes amazingly good. It is rich, silky and extra creamy. Plus, it’s totally vegan.
The recipe uses simple ingredients and comes together in minutes. Start out by sautéing the garlic until fragrant in a pan large enough to hold the pasta and sauce. Add the tomato paste and cook for about 5 minutes until the tomato paste is deep red. Then add the vodka and cook until it has evaporated. Next, add the coconut milk and salt and let the sauce simmer. While that’s happening, just boil up some pasta, drain, and add to the pan with the sauce. Divide the pasta among plates and serve with extra olive oil drizzles, a sprinkle of garlic salt, freshly ground black pepper, and red pepper flakes if you wish.
