Enjoy this Vegan Vodka Pasta, a take on a common menu item in Italian-American restaurants that is surprisingly easy to make at home. Rotini pasta tossed in a luscious tomato vodka sauce, a perfect food. It is one of my favorite weekend dinners, and it tastes amazingly good. It is rich, silky and extra creamy. Plus, it’s totally vegan. 

The recipe uses simple ingredients and comes together in minutes. Start out by sautéing the garlic until fragrant in a pan large enough to hold the pasta and sauce. Add the tomato paste and cook for about 5 minutes until the tomato paste is deep red. Then add the vodka and cook until it has evaporated. Next, add the coconut milk and salt and let the sauce simmer. While that’s happening, just boil up some pasta, drain, and add to the pan with the sauce. Divide the pasta among plates and serve with extra olive oil drizzles, a sprinkle of garlic salt, freshly ground black pepper, and red pepper flakes if you wish.

Steps to make Vegan Vodka Pasta

Sauté garlic

Heat ¼ cup olive oil over low heat. Add 3 minced garlic cloves and sauté until fragrant.

Add tomato paste

Add 1 (6-ounce) can tomato paste and stir until the tomato paste is deep red.

Add vodka

Add ¼ cup vodka and cook, stirring, until the vodka evaporates.

Add coconut milk and salt

Stir in 1 (14-ounces) can full-fat coconut milk and 1 teaspoon salt. Let the sauce simmer.

Cook pasta

Meanwhile, bring a large pan of water to a boil and cook 1 pound rotini pasta according to package directions until al dente. Remove 1 cup of the pasta cooking water.

Drain and transfer to pan

Drain the pasta and transfer to the pan with the sauce. Toss to combine. Add a little reserved pasta water to achieve the desired consistency.

Serve

Season with a sprinkle of garlic salt, red pepper flakes, freshly ground black pepper, and extra olive oil, and serve immediately.
