Whenever I crave a healthy lunch, I always think of this Veggie & Hummus Sandwich. It is fresh and full of flavor and it is filling too thanks to the hummus. This is one sandwich that will get you through the mid-afternoon slump and keep you feeling full until dinner.

To make this sandwich, start by spreading one slice of whole-grain bread with hummus and another with avocado. Next, fill the sandwich with the greens, bell pepper, cucumber and carrot. Slice in half and serve. How simple is that?

Spread bread with hummus and avocado

Take two slices of whole-grain bread and spread 3 tablespoons of hummus on one slice and ¼ mashed avocado on the other.

Fill the sandwich

Place ½ a cup of salad greens, ¼ sliced bell pepper, ¼ cup of sliced cucumber and ¼ cup of shredded carrot on one of the bread slices. Top with the other slice of bread.

Serve

Slice the sandwich in half and serve immediately.
