Whenever I crave a healthy lunch, I always think of this Veggie & Hummus Sandwich. It is fresh and full of flavor and it is filling too thanks to the hummus. This is one sandwich that will get you through the mid-afternoon slump and keep you feeling full until dinner.
To make this sandwich, start by spreading one slice of whole-grain bread with hummus and another with avocado. Next, fill the sandwich with the greens, bell pepper, cucumber and carrot. Slice in half and serve. How simple is that?
