225 g Chickpeas cooked or canned, drained and rinsed
50 g Wild garlic roughly chopped
1½ tbsp Lemon juice
2 tbsp Olive oil
2 tsp Tahini
1 tsp Cumin
¼ tsp Salt
¼ tsp Black pepper ground
¼ tsp Red pepper flakes

In the park close to my house there is a big patch of wild garlic which I look forward to every year! One of my favorite things to make with it is Wild Garlic Hummus. The addition of wild garlic to hummus turns it a vibrant green color and the taste is a mild delicate garlic flavor.

Start by blitzing the chickpeas in a blender or food processor. Add wild garlic, lemon juice, olive oil, tahini, cumin, salt and black pepper and continue to blitz until the hummus reaches your desired consistency. Add more oil or water if you prefer a looser hummus. Before serving, sprinkle with red pepper flakes.

Steps to make Wild Garlic Hummus

Blend chickpeas

Place chickpeas in a blender or food processor and blend until the chickpeas come together like a dough.

Add remaining ingredients

Add the chopped wild garlic, 1 ½ tablespoons of lemon juice, 2 tablespoons of olive oil, 2 teaspoons of tahini, 1 teaspoon of cumin, ¼ teaspoon each of salt and ground black pepper. Blend the mixture to get your desired consistency of hummus. Check consistency and add more oil or water if desired.

Serve

Place the hummus in a serving bowl and sprinkle with ¼ teaspoon red pepper flakes before serving.
