½ medium Onion chopped
1 (15 oz) can Tomatoes fire roasted
1-2 Green chili diced
1 (15 oz) Can crushed tomatoes with basil
¼ cup Parsley chopped
½ cup Basil fresh leaves
¼ tsp Black pepper
½ tsp Dried oregano
1 pinch Smoked Paprika
¼ tsp Chili powder
¼ tsp Red chili powder
2 Zucchini spiralized

This is a 30 Minute Spicy Lentil Bolognese that will be putting in a regular appearance in your kitchen. It is super quick and easy to make. It’s very filling too and completely vegan which makes it the number one summer dinner recipe in my kitchen. 

To make this bolognese, start by sautéing onions and garlic. Add cans of fire roasted tomatoes and crushed tomatoes before stirring in chilis, fresh herbs and spices. Bring the mixture to a boil before leaving it to thicken while simmering. Add the lentils and while the sauce cooks, spiralize some zoodles (noodles made from zucchini – gettit?) to serve with the lentil bolognese.

Steps to make 30 Minute Spicy Lentil Bolognese

Cook lentils

Cook 2 cups of lentils according to the package directions. Do not add salt to the cooking water.

Sauté garlic and onions

Preheat 1 tablespoons of olive oil over medium heat in a large skillet. Sauté 2 minced cloves of garlic and ½ a medium onion for about 3-4 minutes, until soft.

Cook sauce

Add a can of fire roasted tomatoes, a can of crushed tomatoes, ¼ cup of fresh parsley, ½ a cup of basil leaves and the spices. Turn up the heat until the sauce begins to boil, then reduce to a simmer. Simmer for 10 minutes to allow the sauce to thicken.

Add lentils

Transfer the cooked lentils to the sauce and mix to combine. Cook over low heat for 10 more minutes.

Spiralize zucchini

Spiralize zucchini to make zoodles.

Cook zoodles

Place the zoodles in a medium sauté pan. Cook gently over medium heat until cooked through, but not soggy. Season with black pepper, to taste.

Serve

Serve this bolognese over zoodles.
