These 7-Ingredient Vegan Stuffed Mushrooms are simple, savory and delicious! As the name suggests, you only need 7 ingredients to prepare this tasty vegan snack.

To make these stuffed mushrooms, start by cooking rice in vegetable stock. Toast walnuts in the oven and prepare mushrooms by brushing any dirt from them and removing the stalks. Once the rice is cooked, use a fork to fluff it and then add vegan Parmesan cheese, toasted walnuts, minced garlic, and olive oil. Bake the mushrooms on a baking sheet without the filling for about 10 minutes to soften. Remove the mushrooms from the oven and scoop generous spoonful of the filling into the center of the mushrooms. Top with additional vegan parmesan cheese and bake until tender and the Parmesan is golden brown.

Preheat oven

Heat the oven to 350 °F.

Cook rice

Rinse ½ cup of rice in a fine mesh sieve. Bring 1 cup of vegetable stock to a boil in a small saucepan and add the rinsed rice. Reduce the heat, cover and cook for 30-45 minutes until the liquid is completely absorbed. Taste and cook longer if you prefer chewier, softer rice.

Toast walnuts

As the rice cooks, place ¼ cup of crushed walnuts on a baking sheet. Toast in the oven for 5 minutes. Remove and set aside.

Clean mushrooms and spray with oil

Use a damp towel to brush dirt from the mushrooms. Remove the stems and brush or spray with olive oil and set aside.

Fluff rice and flavor

Once the rice is cooked, fluff using a fork and add ¼ cup of vegan Parmesan cheese, toasted walnuts, minced garlic, and olive oil. Taste and adjust seasonings if necessary.
