Spicy and juicy, Apple Cider Glazed Chicken that is seasoned with sweet and spicy flavors from fresh rosemary and apple slices in an apple cider, honey, grainy mustard and butter sauce. Add apple slices and cubed sweet potatoes to your roasting dish and serve with your scrumptious chicken.
It’s always great when dinner can be prepared in one dish too!
To make Apple Cider Glazed Chicken, you will need the following ingredients:
Preheat the oven to 425 °F.
In a medium bowl, season the sweet potatoes and apples with olive oil, rosemary, salt and pepper and toss to combine.
Heat olive oil in a large, ovenproof skillet over medium-high heat. Once hot, add the chicken and sear, skin-side down for about 2 minutes until golden. Remove from skillet and set aside to keep warm.
Using the same skillet, mix the apple cider, honey and grainy mustard together and bring to a simmer.
Cook until reduced slightly and whisk through the butter.
Add the seared chicken to skillet and scatter seasoned apples and sweet potatoes with rosemary sprigs around the chicken.
Transfer entire skillet to the preheated oven and roast for about 20 minutes until the sweet potatoes have softened and the chicken is cooked through. (If potatoes need longer, remove chicken and keep warm until sweet potatoes are ready.)
Serve chicken with potatoes and glaze drippings.
