This is actually a really fun dish to make as you get to shake everything up in a ziplock bag or tupperware container before marinating it in the refrigerator. When you are ready to cook it, heat the grill and cook through. Amazing tender chicken. 

To make this delicious grilled chicken dish, start by preparing the onion and garlic. Place them in a ziplock bag and add the apple cider, olive oil, fresh thyme, apple cider vinegar, mustard, salt, sugar and black pepper. Shake everything together until well combined and then add in the chicken thighs. Turn the bag over so the chicken is well coated. Marinate in the refrigerator for up to 24 hours. Cook the chicken over a medium high grill until it develops a charred crust. Flip and continue to grill until cooked through. Serve garnished with fresh thyme and lemon slices.

Prepare onion and garlic

Peel an onion and 4 cloves of garlic. Chop roughly into chunks and add them to a large ziplock bag.

Add 2 cups of apple cider, 2 tablespoons of olive oil, 6 sprigs of fresh thyme, 1 tablespoon of apple cider vinegar, 2 teaspoons of Dijon mustard, 1 teaspoon each of salt and brown sugar, and ½ a teaspoon of freshly ground black pepper to the onion and garlic. Shake well until fully combined.

Place the chicken thighs in the bag and turn it over to ensure the thighs are fully coated with the marinade.

Grill the chicken for 8 minutes until it develops a charred crust. Flip the chicken pieces and cook for 8 more minutes on the other side.
