Combine the juice of a whole lemon with ¼ cup of apple cider vinegar, 3 tablespoons of pure maple syrup, 3 tablespoons of olive oil, 1 finely minced clove garlic, 1 teaspoon of ground black pepper, and ¼ teaspoon of sea salt.
Pour the dressing over the coleslaw mix. Toss well and place in the refrigerator to chill for 20 minutes.
