I love the ingredient combination in this Arugula & Tuna Jar Salad. I often prepare a few jar salads at the weekend if I know I have a busy week ahead. This salad always makes it into my mason jar salad prep because it tastes so good!
When I make this one, I start by making a dressing from oil, lemon, salt and pepper at the bottom of the jar. Next I add my ingredients in a particular order – tuna, followed by cucumber, chickpeas, onion and arugula always goes in last. When lunchtime rolls around, I simply give the jar a good shake and dig right in.
To make my version of Arugula & Tuna Jar Salad, you will need the following ingredients:
Take a large mason jar. Add the juice of half a lemon and 2 teaspoons of olive oil. Season to taste with salt and freshly ground pepper.
Layer the ingredients into the jar in this order: ½ can of Albacore tuna, ¼ cup of sliced cucumber, ½ a cup of canned chickpeas, ¼ cup of sliced red onion and finish with 1 cup of baby arugula.
Place the lid on the jar and refrigerate until you are ready to eat.
When you are ready to eat, shake the jar well and dig in with a fork.
