Sea bream, aka orata, dorade and porgies, is a sustainable, velvety, sweet-tasting fish that deserves to be on your cooking list. Here, the whole fish is roasted on a bed of thinly sliced tomatoes, red onions, and bell peppers. In terms of seasoning, the best approach is to keep it simple. With nothing more than salt, black pepper and dried rosemary, the tender sea bream melts in your mouth and does not require much work to make the fish shine. Preheat oven

Preheat your oven to 350°F.

Prepare vegetables

Pour 2 tablespoons olive oil into a baking dish, turning so that it coats the entire bottom. Layer the sliced bell pepper, tomatoes, and red onion rings in the prepared baking dish, alternating the layers. Sprinkle with a pinch of kosher salt and black pepper to taste.

Prepare fish

Place the whole fish on top of the vegetables. Season inside and out with kosher salt and freshly ground black pepper. Add the dried rosemary and a few red onion rings inside. Sprinkle the top with dried rosemary, too.

Bake

Bake for 20 minutes, then pull out the baking dish and drizzle the fish with 1 tablespoon olive oil. Return to the oven and bake for another 5 minutes.

Serve

To serve, run a knife along the back of the fish and then use a spoon to separate the flesh from the bones. Serve with baked vegetables and fresh lettuce.
