Pour the tempered egg yolks into the saucepan and gently heat without boiling, stirring constantly, until the mixture coats the back of a spoon. Remove from heat and stir in 1 teaspoon pure vanilla extract.
Serve the apples, drizzled with the warm vanilla sauce, and enjoy.
