Start by making a starter from milk, yeast, flour and sugar. Then add more flour, salt, eggs, butter and oil. Once the dough has proved, shape it into 12 equal sized buns. Brush with egg wash and sprinkle sesame seeds on top so they look professional.

Make the starter

Place the yeast and milk in the bowl of a stand mixer with the paddle attachment. Mix well and allow to rest for 5 minutes. Add the flour and sugar mix using the paddle attachment until you have a smooth batter.

Allow to stand

Remove the beater and cover the bowl with plastic wrap. Leave the starter rest for about 30 minutes until bubbles appear on the surface of the dough.

Make the dough

Attach the dough hook to your mixer and add the flour, salt and eggs. Once the dough forms, knead it with the dough hook for about 4 minutes. Then add the butter, gradually (2 tablespoons at a time). Continue kneading with the dough hook, scraping the bowl occasionally for about 5 minutes until the dough looks smooth and shiny.

Prove the dough

Place the dough in a lightly oiled bowl and cover with plastic wrap. Leave to rise. After about 1 ½ hours, knock the dough back. Cover again and leave to rise for another 45 minutes.

Heat the oven and line a baking sheet

Preheat the oven to 400°F. Line a baking sheet with parchment paper.

Shape dough into buns

Divide the dough into 12 equal balls. Shape them into buns by pressing the balls down to make thick disks. Arrange the buns on the baking sheet. Cover with a light towel and leave them in a warm place for about 20 minutes.

Brush with egg wash

Make the egg wash by whisking one large egg with one tablespoon of water. Brush each bun with the egg wash. Sprinkle with sesame seeds, if desired.

Bake the buns in the oven for 7 minutes at 400°F. Reduce the heat to 350°F and bake for 10 to 12 more minutes until golden brown.
