3 ½ cups Water
2 tbsp White vinegar
2 tbsp Balsamic vinegar
1 clove Garlic minced
¾ tsp Black pepper
½ tsp Salt
½ cup Olive oil
¼ cup Basil fresh , chopped
6 oz (about 8 cups) Baby spinach fresh , coarsely chopped
16 oz Cherry tomatoes halved
6 Green onion thinly sliced
2 cups (8 oz) Feta cheese crumbled

If you love healthy and yummy recipes, make this Mediterranean Brown Rice Salad. It is simple and makes enough to feed a crowd. This delicious salad features chewy and nutty-tasting brown rice, cherry tomatoes, baby spinach, and briny feta. A bright and zingy dressing with basil takes this veggie and brown rice bowl over the top. Perfect for a dinner party!

Start with the rice. Simmer the rice until tender and all the water has absorbed. In the meantime, whisk together the ingredients for the dressing. Once the rice is cooked, combine the rice with the baby spinach. Stir in the cherry tomatoes and sliced green onions and toss with the dressing until the spinach has wilted. Finally, stir in the crumbled feta, then loosely cover the salad and chill it until cold. If you are vegetarian or vegan, no problem! Simply sub out the feta for vegan cheese.

Steps to make Mediterranean Brown Rice Salad

Cook rice

In a saucepan, combine 1 ½ cups uncooked long-grain brown rice and 3 ½ cups water and bring to a boil. Reduce the heat and simmer, covered, until the rice is tender and all the liquid has absorbed, 35-40 minutes.

Prepare dressing

In the meantime, in a bowl, whisk together 2 tablespoons white vinegar, 2 tablespoons balsamic vinegar, 1 minced garlic clove, ¾ teaspoon pepper, and ½ teaspoon salt. While whisking, gradually add ½ cup olive oil in a steady stream. Stir in ¼ cup fresh basil.

In a large bowl, place 6 ounces coarsely chopped spinach and the cooked rice. Stir in 16 ounces tomatoes, 6 thinly sliced green onions, and the prepared dressing. Toss until the spinach has wilted. Gently stir in 2 cups crumbled feta. Loosely cover and transfer to the fridge for 2 hours or until cold.
