1 head Cauliflower large , about 1½ to 2 pounds, cut into florets
For the Sauce:
4 tbsp Butter
¼ cup All-purpose flour
½ tsp Salt
â…› tsp Black pepper ground
2 cups Milk
1 tbsp Dijon mustard
1½ cups (6 ounces) Cheddar cheese mild or sharp
For the Topping:
1 cup Breadcrumbs soft fresh
1 tbsp Parsley fresh chopped , optional
½ tsp Ground paprika
2 tbsp Butter melted

This Cauliflower and Cheese Casserole is a wonderful addition and side dish to serve at any meal. Pair it with a roast beef, juicy chicken or even a leg of lamb, no matter what you choose, the match up just works.

Gently simmer the cauliflower until tender, taking care to not over boil it and resulting in mush! Combined with a mustard cheese sauce and topped with a paprika and parsley seasoned breadcrumb mix, there is nothing not to love!

Boil cauliflower

In a small amount of water, boil or steam cauliflower for about 6-8 minutes until soft and tender. Drain thoroughly and set aside.

Preheat oven and prepare baking dish

Preheat oven to 350 °F and grease a 2-quart baking dish with oil or butter.

Melt butter

In a large saucepan over medium heat, melt 4 tablespoons butter.

Add flour

Add flour and stir well to combine until smooth. Cook, stirring constantly for 2 minutes.

Season

Season with salt and pepper.

Add milk

Gradually add the milk, and continue cooking and stirring until sauce is thickened and bubbling.

Add mustard and cheese

Add mustard and cheese and continue cooking, while stirring until cheese is melted.

Prepare casserole

Pour sauce over drained cauliflower and gently mix to blend. Transfer to the prepared baking dish.

Prepare topping

In a small mixing bowl, mix breadcrumbs, parsley, paprika and 2 tablespoons butter until well combined. Sprinkle topping over the cauliflower cheese.

Bake for 15-20 minutes until casserole is bubbling and the topping is browned and golden.
