These Cheese Quesadillas are one of my favorite things to make. They taste delicious but really quick and simple to make. They are the perfect quick and easy dinner for your Cinco de Mayo festivities this year. When making quesadillas, I find Oaxaca, Chihuahua, mozzarella, or Monterey Jack cheese is best.

To make these, start by heating the tortillas slightly on a skillet, flipping them over every 10 seconds, until they’re easily foldable and pliable. Sprinkle half of the cheese onto one half of each tortilla. Fold the tortillas over the cheese to create a half-moon shape. Cook the quesadillas until one side is golden-brown. Sometimes I find it is useful to press down lightly on the tops of the quesadillas with a spatula to prevent the tortillas from opening up. Flip each one over and continue to cook until golden-brown on the other side and the cheese is fully melted. Serve with sour cream, pico de gallo and your favorite salsa.

Steps to make Cheese Quesadillas

Heat a skillet

Place a large nonstick skillet over low-medium heat to heat up.

Heat tortillas

Divide â…” cup of shredded cheese evenly and sprinkle it onto one half of each tortilla. Season with salt to taste.
