This is my version of the takeout classic Chinese Fried Rice. Except you know when you make it at home it’s so much tastier PLUS you know exactly what’s going inside it! The basic ingredients for my version are rice, carrots, peas, and eggs. That’s what gives the rice its texture, crunch, color and of course the fluffy scrambled egg running through it.
What gives it a good kick of flavor is the sesame oil and soy sauce, both of which you can adjust to your own taste to make it just the right level of saltiness. The rice is best made in a wok, as it’s easy to keep tossing the ingredients and keep them moving around, so they don’t stick. But you can use a regular pan too.
To make Chinese Fried Rice, you will need the following ingredients:
Add the rice and 4 cups of water to a pan and bring to a boil. Once boiling, place a lid over the pan, lower the heat and simmer for 20 minutes until the rice has softened.
Bring some water to boil in a pan and add the carrots, cooking for 3-5 minutes. Add the peas to the boiling water for a minute or so and then immediately drain.
Place the wok (or a pan) over a high heat. Add the oil and wait until it is very hot before adding the carrots and peas, stirfrying for half a minute.
Add the eggs, stirring them quickly so they scramble and toss together with the vegetables.
Add the cooked rice to the wok and toss to mix everything together.
Drizzle over the soy sauce and sesame oil and toss to ensure everything is well coated.
