Preheat the oven to 350 °F.

Whisk egg yolks and sugar

In a medium bowl, whisk together 5 large egg yolks and 1 tablespoon low-carb sugar until combined.

Heat cream

In a saucepan, add 2 cups heavy cream, the remaining sugar, and ½ a teaspoon stevia glycerite. Place over medium heat and gently heat, stirring occasionally, until steaming. Then remove from the heat.

Combine cream and yolk mixture

In a slow stream, whisk egg yolk mixture into the cream mixture.

Add chocolate and brandy

Add 3.5 ounces chopped chocolate and stir to combine and melt. Pour in 2 tablespoons brandy and whisk to combine.

Divide mixture between ramekins

Place the ramekins inside a large baking pan. Divide the chocolate cream mixture evenly between 4 6-oz ramekins. Fill the pan with boiling water halfway up the sides of the ramekins.

Carefully transfer to the oven and bake for 30 minutes or until centers are barely set.

Cool the crème brûlé in the water bath for an hour. Then remove and place on a wire rack to cool completely.

Caramelize sugar

Before serving, sprinkle ½ a teaspoon low-carb sugar over the top of each ramekin. Using a culinary torch, melt the sugar until caramelized and browned.
