To make the Colcannon Irish Mashed Potatoes with Kale, you will need the following ingredients:
Place 5-6 peeled and cut in half potatoes in a pot, cover with 4 cups cold water and bring to a boil. Cook for 20 minutes or until easily pierced with a fork.
Meanwhile, in a skillet, heat 1 tablespoon olive oil and add 4 chopped kale leaves, 1 tablespoon leeks, 3 chopped green onions, 1 pinch ground nutmeg, and 1 minced garlic clove. Sauté, stirring, until the kale is tender, about 5 minutes.
Drain off the water, return the potatoes to low heat, and let all the liquid evaporate for about 2 minutes. Then remove from heat.
Add 40 grams butter and mash with a potato masher, slowly adding 50 milliliters milk, until creamy.
Add 2 teaspoons salt and 1 teaspoon black pepper. Mash the kale mixture into potatoes until smooth.
Serve hot and enjoy!
