This version of mashed potatoes is not only flavorful and satisfying, but it is healthy, too, because these mashed potatoes have greens in them. From start to finish, this kale colcannon recipe takes about 30 minutes, and yields two hefty servings. Starchy and creamy Russet potatoes work best here, as do Yukon Golds.     Place 5-6 peeled and cut in half potatoes in a pot, cover with 4 cups cold water and bring to a boil. Cook for 20 minutes or until easily pierced with a fork.

    Meanwhile, in a skillet, heat 1 tablespoon olive oil and add 4 chopped kale leaves, 1 tablespoon leeks, 3 chopped green onions, 1 pinch ground nutmeg, and 1 minced garlic clove. Sauté, stirring, until the kale is tender, about 5 minutes.
