I came up with this Couscous Tabbouleh with Fresh Mint & Feta recipe recently when I was craving this Middle Eastern classic salad. Halfway through my meal prep, I realised I had all the ingredients to make a classic tabbouleh except for one – bulgar wheat. Luckily I had couscous at hand so I substituted it and do you know what? I think I prefer my version now!
Tabbouleh is a traditional vegetarian Lebanese dish – it is full of fresh zingy flavors like parsley and mint. You could easily omit the feta cheese and make this recipe vegan if you like.
To make my Couscous Tabbouleh with Fresh Mint & Feta, you will need the following ingredients:
Bring water to a boil in a saucepan. Add the couscous and stir. Remove the pan from the heat and cover. Allow to stand for 5-8 minutes or until water is fully absorbed. Fluff the couscous with a fork.
In a large salad bowl, mix the chickpeas, tomato and cucumber together.
Whisk lemon juice, lemon zest, oil, herbs and seasonings together in a separate bowl.
Drizzle the dressing over chickpea mixture.
Add the couscous and mix well until all ingredients are fully combined.
Chill in the refrigerator until ready to serve.
Add a garnish of feta cheese and serve.
