This super simple recipe for Easter Hummus Pots proves that you don’t have to spend much time in the kitchen to make a crowd-pleasing appetizer. It looks cute, it’s cheap and healthy, and it all comes together in a food processor in less than 5 minutes. The recipe is vegan- and vegetarian-friendly.
Start with the hummus. In a food processor, blend hummus ingredients until smooth. Add a little cold water, a teaspoon at a time, to help it blend if needed. Scoop the hummus into clay pots or small bowls. Next, make holes in the top of the carrots using a skewer. Insert a small sprig of parsley into each carrot. Finally, “plant” your carrots in the pots with hummus and serve. Enjoy!
To make the Easter Hummus Pots, you will need the following ingredients:
In a food processor, combine the chickpeas, 1 tablespoon lemon juice, ½ teaspoon salt, 1 teaspoon ground cumin, and ¼ cup olive oil.
Blend all ingredients until smooth, adding cold water, a teaspoon at a time, to help it blend if necessary. Keep covered until ready to serve.
Cut the parsley into small thin sprigs. Using a skewer, make holes in the top of the carrots. Insert one small sprig of parsley into each carrot top.
Scoop the hummus into clean clay pots or small bowls. Insert the carrots into the pots.
