This Easy Zucchini Stir Fry is a firm favorite in my weeknight kitchen. It is jam-packed with healthy vegetables, all wrapped up in a garlic and ginger sauce that is a perfect balance between sweet and salty. If I have some leftover roast chicken or pork, I shred that and add it too, but this dish tastes delicious without meat too.
Start by whisking all of the sauce ingredients together in a small bowl. Sauté carrots, mushrooms, and zucchini in oil and add. Once the vegetables are soft enough to pierce with a fork, add the sauce and cook until thickened. Serve over rice and enjoy!
To make my Easy Zucchini Stir Fry, you will need the following ingredients:
Combine ⅓ cup of soy sauce with 3 tablespoons of coconut sugar, 1 teaspoon of ginger, 2 minced garlic cloves, and 2 teaspoons of cornstarch in a small bowl.
Place 2 tablespoons of olive oil in a large pan or skillet over low to medium heat. Add carrots and sauté for 2-3 minutes.
Add the sliced mushrooms and zucchini and continue to sauté for 8-10 more minutes until the vegetables are tender enough that a fork pierces them easily.
Once the vegetables are tender, pour over the sauce and continue cooking for 1 minute, until it starts to thicken.
Serve these tasty stir fried vegetables over steamed white rice.
