2 cups Corn kernels from about 2 ears
1 (15-oz.) can Chickpeas rinsed
1 Cucumber quartered and cut into ½ inch pieces
2 Scallions white parts finely chopped, green parts thinly sliced
2 tbsp Olive oil extra-virgin
For the dressing
2 tbsp Lime juice fresh
½ cup Cilantro leaves

I always bring a bowl of this Fresh Corn and Chickpea Salad on family picnics. One of our favorite family pastimes in summer is to take a picnic and drive to a nearby forest or lake and spend the day splashing about or climbing trees. Of course, all that outdoor activity means big appetites when lunchtime comes around! We love the crunch of the fresh corn and the freshness of the cucumber and lime juice. The addition of chickpeas makes this is a filling picnic lunch.

It couldn’t be easier to throw this salad together. Start by mixing the corn, chickpeas and cucumber together in a bowl. Lightly fry the scallions, then coat everything with olive oil, lime juice and cilantro leaves. A delicious lunch in under 15 minutes.

Mix the salad

Combine the corn, chickpeas, cucumber and sliced scallions in a large salad bowl.

Lightly cook the sliced scallions

In a small frying pan, heat the olive oil and add the chopped scallions and lightly fry until they are warm and soft but not sizzling.

Add cooked scallions to corn mixture

Add the cooked scallions to the bowl with the other ingredients.

Dress the salad

Stir in the lime juice and cilantro leaves.

Keep cool until you are ready to serve.
