This Gluten Free Cauliflower Gnocchi is a really great low carb, gluten free pasta dish which makes a regular appearance in my kitchen. The little gnocchi taste absolutely delicious and have a perfect gnocchi texture (which can be hard to achieve when using gluten free flours). Even better news is that this gnocchi is keto-friendly provided you use marinara sauce with no added sugar.

Start by steaming cauliflower rice in the microwave. Once you have squeezed the excess water from the cauliflower, mix it with egg yolks, Parmesan cheese, almond flour and melted mozzarella. Bring the dough together using your hands and chill for 10 minutes before rolling into logs and cutting into gnocchi. Cook for 1 minute in boiling salted water and serve with warm marinara sauce.

Steps to make Gluten Free Cauliflower Gnocchi

Steam cauliflower rice

Steam 3 cups of cauliflower rice in the microwave for 3 minutes. Allow the cauliflower to cool slightly.

Squeeze excess water

When it is cool enough to handle, squeeze as much of the excess moisture as possible using a clean kitchen towel. Transfer cauliflower to a large bowl.

Melt mozzarella

Place 2 cups of mozzarella in a heatproof bowl and microwave for 1 minute until melted.

Assemble the gnocchi dough

Mix 2 egg yolks, 1 cup of Parmesan, and â…“ cup of almond flour into the cauliflower rice. Season to taste with salt and stir in the melted mozzarella. Bring all the ingredients together into a dough using your hands.

Chill dough

Divide the gnocchi dough into 4 evenly sized balls. Place the dough balls in the refrigerator for about 10 minutes, until firm.

Make the gnocchi

Roll each dough ball into long logs. Slice into gnocchi shapes and gently press the top of each piece with a fork to create grooves.

Refrigerate

Chill in the refrigerator until ready to cook.

Cook the gnocchi

Cook the gnocchi for one minute In a large pot of boiling salted water. Drain immediately once cooked.

Serve

Serve immediately with heated marinara sauce. Garnish with some Parmesan and freshly chopped parsley.
