This Spring season I have decided that this Greek Chickpea Salad is a necessity so I opted to add it to our list of healthy spring salad recipes. Nutritionally balanced with all the right bells and whistles from canned chickpeas, cherry tomatoes, onion, bell pepper and cucumber to give you a bright and vibrant, colorful salad dressed with olive oil, red wine vinegar, salt and pepper. I’m vegan but you can add feta cheese if you wish. Just another way to make this salad even better!
To make Greek Chickpea Salad, you will need the following ingredients:
In a large salad bowl, toss 2 cans of drained chickpeas with 1 pint of cherry tomato halves, 1 minced onion, 1 diced red bell pepper, 2 cups of small diced cucumber and ½ cup of chopped parsley until well mixed.
Add 2 tablespoons of olive oil, 2 tablespoons of red wine vinegar, salt and pepper to taste. Toss again to evenly coat. Let the salad sit for 30 minutes before serving.
Top with feta, just before serving, if you wish!

I love this salad and the tomato egg salad the most, both have so much going on.
Added a little bit more salt to the dish cause I love salty things and also a drop of some lemon juice to make it zesty.
