To make the Greek Sheet Pan Chicken Dinner, you will need the following ingredients:
Preheat the oven to 425 °F.
In a small bowl, whisk together ½ cup olive oil, 3 tablespoons lemon juice, 4 minced garlic cloves, 2 teaspoons dried oregano, 1 teaspoon dried thyme, 1 teaspoon Dijon mustard, 1 teaspoon kosher salt, and ½ teaspoon freshly ground black pepper.
Use a paper towel to pat 6 chicken thighs dry and place them in a large bowl. Pour ⅔ of the prepared lemon-herb marinade on top. Using your hands, toss the chicken in the marinade to coat well. Set aside to marinate for 15 minutes.
