For the Healthy Poppyseed Dressing
½ cup Plain yogurt
1 tbsp Maple syrup
1 tsp Rice vinegar or white, apple cider vinegar
1 tsp Dijon mustard
1 tbsp Poppy seeds
1 tsp Onion powder
½ tsp Salt
Black pepper ground, to taste
For the Grilled Chicken Breast
large Chicken Breast boneless & skinles, cut in half lengthwise
1 tbsp Olive oil extra virgin
½ Lemon zest and juice
1 clove Garlic small , grated
1 tsp Dried oregano
¼ tsp Salt
¼ tsp Black pepper ground
For the Grilled Chicken Salad
Mixed greens to taste
1 cup Raspberries or strawberries , or blueberries
1 cup Grape tomatoes halved
¼ cup Feta cheese or goat cheese, crumbled
½ cup Nuts toasted mixed , unsalted
⅓ cup Red onion thinly sliced

Make dressing

Combine ½ a cup of plain yogurt with 1 tablespoon of maple syrup, 1 teaspoon of vinegar, 1 teaspoon of Dijon mustard, 1 tablespoon of poppy seeds, 1 teaspoon of onion powder, ½ a teaspoon of salt and ground black pepper, to taste until you have a smooth creamy dressing.

Marinate chicken

In a large bowl, combine 1 large boneless & skinless halved chicken breast, 1 tablespoon of olive oil, the zest and juice of half a lemon, a small clove of garlic, 1 teaspoon of oregano and salt and pepper. Stir to combine and leave to marinate for 30 minutes.

Grill chicken

Grill the chicken on medium high heat for about 10 minutes, flipping once halfway through. Once grilled, rest under foil for 5 minutes.

Assemble salad

Place the greens, sliced grilled chicken breast, 1 cup of raspberries, 1 cup of halved grape tomatoes, ¼ cup of feta or goat cheese, ½ a cup toasted mixed nuts, ⅓ cup thinly sliced red onion in a large salad bowl. Drizzle the poppyseed dressing over the salad and toss well to coat.
