To make Grilled Chicken Salad with Raspberry, you will need the following ingredients:
Combine ½ a cup of plain yogurt with 1 tablespoon of maple syrup, 1 teaspoon of vinegar, 1 teaspoon of Dijon mustard, 1 tablespoon of poppy seeds, 1 teaspoon of onion powder, ½ a teaspoon of salt and ground black pepper, to taste until you have a smooth creamy dressing.
In a large bowl, combine 1 large boneless & skinless halved chicken breast, 1 tablespoon of olive oil, the zest and juice of half a lemon, a small clove of garlic, 1 teaspoon of oregano and salt and pepper. Stir to combine and leave to marinate for 30 minutes.
Grill the chicken on medium high heat for about 10 minutes, flipping once halfway through. Once grilled, rest under foil for 5 minutes.
