I love to make Haricots Verts with Cherry Tomatoes and Mushrooms as a side dish to accompany grilled meat or fish in summer. This dish has a very French twist – not only does it use haricots verts, it cooks the veggies in butter which is very common in the French cuisine. Not the healthiest choice, but 100% delicious.
Start by melting butter in a large pan over medium-high heat. Add the haricots verts and mushrooms to the pan and sauté until vegetables are tender. Add cherry tomatoes and vinegar to the pan and toss well to coat. Season the vegetable mixture with salt and pepper to taste before serving.
To make this version of Haricots Verts with Cherry Tomatoes and Mushrooms, you will need the following ingredients:
Place 1 tablespoon of butter in a large pan or skillet and melt over medium-high heat.
Add 8 ounces of haricots verts and ¾ cup of sliced mushrooms to the pan and cook for around 6 minutes until tender.
Add ½ a cup of cherry tomatoes and 1½ teaspoons of vinegar to the pan. Shake the pan a few times until the ingredients are evenly coated.
Season the vegetable mixture with salt and pepper to taste.
Serve immediately.
