To make Easy and Healthy Vegetable Fried Rice, you will need the following ingredients:
Using an Instant Pot, combine 1 cup of dry brown rice with 1¼ cups of water and cook on the manual, high pressure setting for 25 minutes. Once cooked, quick release and cool for about 5-6 minutes allowing as much steam to escape as possible.
In a large skillet heat 1-2 tablespoons of olive oil. Add ½ diced red bell pepper, ½ cup of shredded cabbage, 2 diced carrots and ½ diced onion. Toss and saute for about 4-5 minutes until the vegetables have softened.
Add 2 eggs and cook stirring and folding until eggs are thickened and cooked through.
Add cooked rice to the the skillet with 3-4 tablespoons of coconut aminos. Toss to combine everything together and saute for about 2-3 minutes for flavors to blend.
Season with salt and pepper to taste for serving.
