This Hearty Baked Beef Stew is one of those dishes that I make when I feel the weather get cooler and I know that winter is coming. It’s a really comforting winter warmer that I love to make in advance and heat up when we come home red-cheeked and hungry from a crisp walk in the woods.
It’s very easy to prep too – you don’t even have to brown the beef! Simply mix the tomatoes, water, tapioca, sugar, salt and pepper in a Dutch oven. Add the remaining ingredients and bake in the oven until you have tender vegetables and melt in your mouth cubes of beef.
To make Hearty Baked Beef Stew, you will need the following ingredients:
Preheat the oven to 375 °F.
Mix the tomatoes, water, tapioca, sugar, salt and pepper in a large ovenproof dish or Dutch oven.
Mix in the beef, carrots, potatoes, celery, onion and bread cubes.
Cover the stew and bake in the preheated oven until the meat is falling apart and the vegetables are tender (1¾ - 2 hours).
Serve this stew in large bowls. Mop up any delicious juices with chunks of fresh bread.
