Ingredients

For the salad:
3 large heads Broccoli
5 Radishes cut in 3 and dice
2 Tomatoes quartered and seeded than diced
1 Apples peeled and diced
½ cup Red Grapes diced, drain the juice
1 cup Green onion 5 green onions minus the white part diced
1 cup Carrots shredded
½ cup Dry Cranberries optional, but highly recommended
For the dressing:
3 tbsp Sunflower oil or olive oil
1 tbsp Mayonaise
1 tbsp Sour cream
½ tsp Garlic salt
3 tbsp Lemon juice

Loaded Broccoli Radish Salad

If you have been following my recipes for a while, you will have noticed that one of my favorite ingredients is: broccoli! I love broccoli in all its forms – cooked, in juices, in stews… But I love it the most served raw in salads. This Loaded Broccoli Radish Salad is a great showcase for broccoli as well as for radishes, another of my salad favorites.  

Start this salad by chopping broccoli, radishes, tomatoes and apple. Chop green onion and grate a carrot. Add these to the salad bowl along with the grapes and cranberries. Make a dressing from oil, mayo, sour cream, salt, garlic powder and lemon juice. Toss the salad with the dressing until evenly coated. Serve and enjoy!

Steps to make Loaded Broccoli Radish Salad

Wash veggies

Wash the vegetables.

Prepare vegetables

Chop 3 large heads of broccoli, 5 radishes, 2 tomatoes and apple into small chunks and place them in a large salad bowl.

Chop green onion and carrot

Chop 1 cup of green onion and grate a medium carrot. Add the chopped carrot, green onion and grapes to the ingredients in the salad bowl.

Add the cranberries

Add the cranberries to the salad bowl.

Prepare the dressing

In a separate bowl, whisk 3 tablespoons oil, 1 tablespoon of mayo, 1 tablespoon of sour cream, ½ teaspoon of salt, a few dashes of garlic powder and 3 tablespoons of lemon juice together until you have a smooth dressing.

Dress the salad.

Toss the broccoli salad with dressing until fully combined.

Serve

Serve this salad as a main dish or alongside your favorite evening meal.
