Where have these easy Matcha Protein Pancakes been all my life? I am probably the last person on the planet to have tried green Chinese matcha tea! I’ve only recently become aware of this magical elixir and its numerous health benefits including antioxidants and mood enhancing qualities.
These matcha green tea protein pancakes not only taste delicious, they are simple to make too. Start by mixing some nut/seed butter with banana, and milk. Sift in the dry ingredients and whisk until combined. Cook the pancakes in a skillet in batches until all the batter has been used up. I serve mine with strawberries.
To make this Matcha Protein Pancakes, you will need the following ingredients:
Mix 1 tablespoon of nut/seed butter, 1 mashed banana and ½ cup of milk together in a bowl.
Sift ½ a cup of flour, 1 serving of vegan vanilla protein, 1½ teaspoons of matcha powder and 1 teaspoon of baking powder into the wet ingredients.
Set aside for 5 minutes to settle.
Lightly grease a skillet with coconut oil and heat over medium-low heat.
Ladle some batter onto the skillet. Flip once bubbles appear on top of the pancake. Cook until both sides are golden brown.
Repeat the process with the remaining batter.
Serve these green pancakes with your favorite berries on top.
