For Meat Base:
1 tbsp Olive oil
1 Onion small , diced
½ Red bell pepper chopped
1 lb Ground beef
1 tsp Garlic minced
1 tsp Chili powder
¼ tsp Cayenne pepper
Salt to taste
Black pepper to taste
½ cup Corn frozen
1 cup Cheese shredded Mexican cheese blend, divided, or more to taste
1 cup Salsa
For Corn Bread Topping:
1 cup Cornmeal
¾ tsp Salt
½ tsp Baking soda
1 cup Milk
2 Eggs beaten

This Mexican Corn Bread Casserole is a really delicious and tasty Mexican style casserole that you can whip up and have on the table in under an hour. You can’t beat the cheesy Mexican flavors from this dish. I love it!

To make this tasty casserole, start by cooking onion and red bell pepper. Add ground beef, garlic, chili powder, cayenne pepper, salt, and black pepper and cook until the beef is browned. Add corn and some of the shredded Mexican cheese blend and mix well. Pour the sauce into a casserole dish and cover with a thin layer of salsa. Make a corn bread mixture and place it on top of the salsa layer. Top with the remaining shredded Mexican cheese blend and bake in the oven until brown on top.

Steps to make Mexican Corn Bread Casserole

Heat oven

Preheat the oven to 425 °F.

Cook onions and peppers

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add 1 diced onion and ½ a red bell pepper and saute for 5 to 7 minutes, until softened.

Add beef

Add 1 pound of ground beef, garlic, chili powder, cayenne pepper, salt, and black pepper. Cook for 5-7 minutes, stirring occasionally until the beef is browned.

Add corn

Stir in frozen corn toss for about 3 minutes until defrosted. Drain the fat from the skillet and discard.

Assemble casserole

Add ¼ of the shredded Mexican cheese blend to the sauce and mix well. Pour all of the sauce into a 9x13-inch casserole dish. Cover the meat sauce with a thin layer of salsa.

Make corn bread topping

Combine 1 cup of cornmeal, ¾ teaspoon of salt, and ½ teaspoon of baking soda in a large bowl. Add 1 cup milk and 2 beaten eggs and stir until fully combined.

Top with corn mixture

Top the salsa with the corn bread mixture and scatter the remaining shredded Mexican cheese blend on top.

Bake in the oven for about 30 minutes until golden on top.

Serve with lots of sour cream on the side.
