To make Mushroom Pate, you will need the following ingredients:
In a large sauté pan over medium heat, heat 2 tablespoons of oil then add 1 pound of roughly chopped mushrooms. Cook, while stirring, for a few minutes until they begin to brown.
Add 3 ounces of finely chopped shallots. Sauté for about 3-4 minutes until they begin to soften.
Add 1 clove of grated garlic, ¼ teaspoon of salt and ground black pepper each, and 1 spring of finely chopped fresh rosemary. Cook for 2 minutes then set aside for about 10 minutes to cool.
Transfer the mushroom mixture to a food processor and add 8 ounces of ricotta cheese. Blend until smooth then season with salt and pepper to taste.
Transfer the blended mixture to ramekins then refrigerate for about 30 minutes to set.
Once set, serve chilled or at room temperature.
